BY THE BOOK! FROM THE CLASSROOM TO THE WEST VILLAGE

NY - Two culinary instructors at the Art Institute of NY (New York Restaurant School) open "Broncas Restaurant and Tapas Bar" at former Andavi Restaurant West Village landmark location

According to owner, Pedro Fortun, "it creates a great opportunity to apply all concepts of great restaurant management instruction as well as a real life example for all our students to follow."



Co-owner Stephen Hornstein adds, "This arrangement is the first of many ways in which we intend to contribute to the development of the students and, at the same time, bring a new restaurant choice to the West Village community."

Broncas is a Mediterranean style restaurant that offers a wide selection of menu items including seafood paella, grilled churrasco steak, great pasta dishes, vegetarian options, rack of lamb, Cod in lobster sauce, "two sauces" beef tenderloin, to name just a few. Broncas also offers an extensive tapas menu from Spain featuring Chorizo al brandy, patatas bravas, Spanish omelet, clams marinera, shrimp in garlic sauce, croquettes, etc.



Broncas is now open for dinner seven days a week starting at 5 p.m. and for brunch on Sundays 11 a.m. to 4 p.m.

According to Leo Motta, Executive chef at Broncas, "We contribute to the students’ growth and success by hiring them as dining room, kitchen, and management trainees. We also strongly support the school’s externship program."
